Watermelon Salad With Habanero-Pickled Onions and Lime Salt

Quintessential celebration of summer and my picnic/potluck go-to. I’ve been making a huge batch of this at least weekly since June — the juice from the pickled onions can bring out the best in a just-okay watermelon, and make a great watermelon absolutely sing. Quick to assemble, gets better as it sits for a day or two, and feels so fancy when you serve the lime salt in a cute lil pinch pot on the side. 10/10 recipe.
